It’s officially summer! Because we get so much rain nine months out of the year in the PNW, the summers here are magnificent and well worth the wait. It also means access to the best berries you’ve ever had. Get ready for many berry-centered recipes to come including these Coconut Berry Pops.
Wewere inspired by many of the fun 4th of July decorations going up and also love the look of the bright blue and red berries against the white creamy coconut that makes up the popsicles. The sweetness of the berries mixed with the creaminess of the coconut is so refreshing and mouthwatering - perfect for a hot summer day! This 4th of July just got a whole lot sweeter. Happy celebrating.
1 can light coconut milk
1 Tbsp. raw honey
1 tsp. vanilla
2 cups fresh mixed berries (we used blueberries and tayberries)
- Blend the coconut milk, honey, and vanilla together.
- Fill 12 popsicle molds most of the way up with berries.
- Pour the coconut milk mixture into the molds, until each mold is full. Place popsicle sticks into each mold.
- Place in your freezer overnight before removing from the molds and storing in your freezer.
- Enjoy the party!
