Coconut Chia Pudding

Red, White, and Blue. And coconut and chia seeds and berries and vanilla bean paste. Basically the most delicious dessert or snack to celebrate July 4th coming up or just to satisfy a sweet craving. This Coconut Chia Pudding has such an amazing vanilla flavor from Singing Dog Vanilla Bean Paste that goes perfectly with fresh summer berries.


We’re always on the lookout for energizing snacks that are made with simple ingredients and whole foods. We first made our own chia pudding with our Matcha Hemp Chia Pudding and it was a HUGE hit! Making chia pudding is not only easy but a great way to avoid packaged energy bars and get in extra fiber, omega-3 fatty acids, calcium, and magnesium. This Coconut Chia Pudding tastes like melted coconut vanilla ice cream – and it’s only sweetened with vanilla and berries on top! Enjoy this snack during your 4th of July festivities and keep it around for a daily snack or satisfying dessert.



1 can light coconut milk, room temperature

½ cup shredded coconut

4 Tbsp. chia seeds

2 tsp. Singing Dog Vanilla Bean Paste

1 cup Fresh mixed berries


  1. In a bowl or glass container, mix the coconut milk, shredded coconut, chia seeds, and vanilla bean paste. Cover and place in your fridge overnight, stirring occasionally.
  2. The next day, layer up the pudding with fresh berries and serve!
  3. The pudding will keep in your fridge up to one week.
