We've discovered over the past couple years that a huge reward we get from being food bloggers and food lovers in Portland, Or. is discovering new, local products and being able to test them out. Yes, there's amazing and creative health food products popping up all over the world all the time, but it's rare that we get to meet the creators behind the product and learn about why they do what they do. Being in the food world in Portland led us to meet the girls behind Ground Up PDX and we’re always way too excited when we get to try out their delicious flavors. This time, we got a jar of their Snickerdoodle Nut Butter and decided to create this Snickerdoodle Coconut Mousse just for them (and for us!).
When given a product to work with, we try to keep the flavors of our recipe as simple as possible so that the special ingredient is highlighted. It's easy to do with this nut butter because the flavors of cinnamon, honey, and vanilla are so freaking good that we didn't want anything to be lost! That being said, we decided to blend the nut butter with frozen coconut meat and a little bit of unsweetened almond milk to create the creamiest dessert out there with all the flavors of snickerdoodle that we love.
This Snickerdoodle Coconut Mousse is the best way to treat yourself and we highly recommend making it with the Ground Up PDX. Feel free to eat the mousse as is or top it with cacao nibs, berries, or shredded coconut. 1 cup coconut meat
2/3 cup Ground Up PDX Snickerdoodle Almond Butter
½ cup unsweetened almond milk
Optional toppings: cacao nibs, berries, coconut
- Blend all ingredients in your blender until super creamy, scraping down the sides if needed.
- Divide between 2-3 bowls, add your favorite toppings, and serve!
